Golden Glow Rice (Turmeric Pumpkin Rice) Recipe
This Turmeric Pumpkin Rice is a powerhouse dish for anyone managing inflammatory conditions like endometriosis, PCOS, HS, or lupus.

Ingredients:
- 2 cups (day old) cooked white rice
- 1 tbsp turmeric
- 1 cup pumpkin, peeled and diced
- 2 tbsp coconut milk powder
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 yellow bell pepper, chopped
- 1 tsp pimento powder (allspice)
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- 1 tbsp coconut oil
- 1tbsp butter
- ½ cup beer (optional)
- Salt and black pepper to taste
Instructions:

Sauté Aromatics:
In a large pot, heat the oil over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until fragrant and softened. -
Add Pumpkin and Bell Peppers:
Stir in the diced pumpkin and yellow bell pepper. - Add Butter:
Cook for an additional 5 minutes, allowing the vegetables to soften slightly.

Spice It Up:
Add the turmeric, coconut milk powder pimento powder, thyme, and a pinch of salt and black pepper. Stir well. -
Cook Well:
Stir and cook mixture until the pumpkins are soft and most of the liquid has evaporated. - Mash Pumpkin Mixture
Use a fork to gently mash the pumpkins into a rough paste

Add the Rice:
Once the pumpkin is cooked and mashed and most of the liquid has evaporated from the mixture, add the rice. Fold the pumpkin mixture into the rice. Ensure the rice is evenly coated with pumpkin. Cover the pot with a lid. Reduce the heat to low and steam for 10 minutes. Stir occasionally to ensure the rice doesn’t stick to the bottom of the pot. -
Check for Seasoning:
After the rice has cooked, taste and adjust seasoning with salt and pepper if needed. -
Serve:
Fluff the rice with a fork and serve hot. Pair it with your favorite protein or serve as a stand-alone dish.
